Rinsed Quinoa – 1 cup
Vegetable stock – 2 cups
Chili powder – 1 Tablespoon
Cumin seeds – 2 teaspoons
Paprika – 2 Teaspoons

How to Cook

Add the quinoa water in the medium-size skillet, and can of tomatoes together and make the liquid to the boil.

Reduce the heat to medium-low for almost 12-18 minutes or till the time you observe the quinoa is done and the liquid is fully absorbed.

Mix the black beans, lime juice, corn, bell pepper, green onion, and spices to taste and stir.
